FAMILY RECIPE
LEMON PIE
(Ruth Sanford)
>Mix together:
1/4 c. sugar
4 rounded Tbsp. flour
>Mix together:
1 3/4 c. water
Juice and grated rind of 2 lemons
>Gradually add dry ingredients to liquid in sauce pan; bring to boil and cook until thick, stirring constantly
>2 egg yolks, beaten (save whites for merengue); add small amount of pie filling to egg yolks and mix well, then add it all back into pie filling
>Cook slowly another 2 minutes, stirring
>Remove from heat and stir in 1 Tbsp. butter; cool; pour into cooled baked pie shell
>Whip egg whites until stiff peaks form, adding in 1/4 c. sugar and 1/2 tsp. cream of tartar while whipping; add to top of pie
>Put in 400-425 oven a few minutes, until nicely browned

Mary, wasn't it Margaret (or her parents)that imigrated from Scotland? I know your mom knew that side of the family background very well. Did Diamond also immigrate from Scotland?

Sarah, yes, Margaret was born in Skilling, Scotland on Feb. 4, 1849, married Diamond Lawton, died July 23, 1909. --Mary
Diamond Alonzo Lawton was born to Isaac and Jane Lawton in New York in 1838. And one of these days hopefully I WILL have this family tree put together! :)---Mary
