FAMILY RECIPE
LEMON PIE
(Ruth Sanford)
>Mix together:
1/4 c. sugar
4 rounded Tbsp. flour
>Mix together:
1 3/4 c. water
Juice and grated rind of 2 lemons
>Gradually add dry ingredients to liquid in sauce pan; bring to boil and cook until thick, stirring constantly
>2 egg yolks, beaten (save whites for merengue); add small amount of pie filling to egg yolks and mix well, then add it all back into pie filling
>Cook slowly another 2 minutes, stirring
>Remove from heat and stir in 1 Tbsp. butter; cool; pour into cooled baked pie shell
>Whip egg whites until stiff peaks form, adding in 1/4 c. sugar and 1/2 tsp. cream of tartar while whipping; add to top of pie
>Put in 400-425 oven a few minutes, until nicely browned

Wow, Mary, what a great picture. I've never seen this one or any like it. I love the fact that it's not overly posed. It looks so natural. I didn't know Hazel was a teacher. What a cute group! - Laura
That's a lot of kids for Rockton. It must have been a booming town at one point. This one's new to me, also. Love it... thanks Mary.

What an awesome picture. It reminds me of Little House on the Prarie. I wonder what the inside of the school looked like? Small desks, no air conditioning, limited supplies and all ages together. Wouldn't it be cool if Hazel kept a journal of her teaching days? Thanks for sharing, Mary!! --Sarah
