FAMILY RECIPE
LEMON PIE
(Ruth Sanford)
>Mix together:
1/4 c. sugar
4 rounded Tbsp. flour
>Mix together:
1 3/4 c. water
Juice and grated rind of 2 lemons
>Gradually add dry ingredients to liquid in sauce pan; bring to boil and cook until thick, stirring constantly
>2 egg yolks, beaten (save whites for merengue); add small amount of pie filling to egg yolks and mix well, then add it all back into pie filling
>Cook slowly another 2 minutes, stirring
>Remove from heat and stir in 1 Tbsp. butter; cool; pour into cooled baked pie shell
>Whip egg whites until stiff peaks form, adding in 1/4 c. sugar and 1/2 tsp. cream of tartar while whipping; add to top of pie
>Put in 400-425 oven a few minutes, until nicely browned

I agree with everyone, that is one of the first pictures where she doesn't look as much like John as she does you, Laura. I'm looking forward to being well so I can see you guys again. Hope Tuesday goes well.

She is a true cutie. I saw all the other photos of her smiling, too and she is precious!
Hold her often and spoil her often, because they grow fast and then they don't want you hugging them good bye in front of school! :) I held both of my children ALL THE TIME!!! I was very selfish with my children. When my neighbors came to see my babies, I... ( I know this is bad), but I never asked them if they wanted to hold my baby. Because I wanted to! Kelly
