FAMILY RECIPE
LEMON PIE (Ruth Sanford) >Mix together: 1/4 c. sugar 4 rounded Tbsp. flour >Mix together: 1 3/4 c. water Juice and grated rind of 2 lemons >Gradually add dry ingredients to liquid in sauce pan; bring to boil and cook until thick, stirring constantly >2 egg yolks, beaten (save whites for merengue); add small amount of pie filling to egg yolks and mix well, then add it all back into pie filling >Cook slowly another 2 minutes, stirring >Remove from heat and stir in 1 Tbsp. butter; cool; pour into cooled baked pie shell >Whip egg whites until stiff peaks form, adding in 1/4 c. sugar and 1/2 tsp. cream of tartar while whipping; add to top of pie >Put in 400-425 oven a few minutes, until nicely browned

Easter
I was reviewing the CD of photos Nancy gave me and thought I'd post these Easter pictures I saw since Easter is coming up. Would anyone else like to post their Easter pictures? I remember last year Liz gave us all Easter baskets since we were still in town for their wedding. And that makes me ask, how come some years Easter falls in March and other years it's in April? ~Kim
Kim - this is from a website when I Googled your question: "Last year Easter was early — March 23. This year it's April 12. The moon is what decides when Easter is celebrated. It must happen on the first Sunday after the first full moon following the spring equinox, which is March 21. That means the earliest Easter can be is March 22. The latest is April 25. So while Easter is always officially in spring, sometimes it's early enough to still feel like winter." ~Nancy~
And I wonder why G'ma wasn't dressed and ready to go to church like everyone else. Maybe she was so tired from getting the kids ready, clothes ironed, hair combed, etc., that she had no time for herself (like Cinderella). ~N~
