BLOG Instructions (just to get you started)

FAMILY RECIPE
LEMON PIE
(Ruth Sanford)
>Mix together:
1/4 c. sugar
4 rounded Tbsp. flour
>Mix together:
1 3/4 c. water
Juice and grated rind of 2 lemons
>Gradually add dry ingredients to liquid in sauce pan; bring to boil and cook until thick, stirring constantly
>2 egg yolks, beaten (save whites for merengue); add small amount of pie filling to egg yolks and mix well, then add it all back into pie filling
>Cook slowly another 2 minutes, stirring
>Remove from heat and stir in 1 Tbsp. butter; cool; pour into cooled baked pie shell
>Whip egg whites until stiff peaks form, adding in 1/4 c. sugar and 1/2 tsp. cream of tartar while whipping; add to top of pie
>Put in 400-425 oven a few minutes, until nicely browned

Thanks for the kind words. In April, Carl started working for the city of Dallas as a supervisor in the Parks and Recreation department. He deals with a lot of different aspects of the department. It keeps him busy but he says it's never boring. He still works for himself part time on the side, so it is a busy time for him. I've enjoyed seeing your "extra-curricular" activities, hiking and canoeing. My kids especially liked the fence posts on the hiking pictures. "ooh, gross" I think was the delighted comment.
