FAMILY RECIPE
LEMON PIE
(Ruth Sanford)
>Mix together:
1/4 c. sugar
4 rounded Tbsp. flour
>Mix together:
1 3/4 c. water
Juice and grated rind of 2 lemons
>Gradually add dry ingredients to liquid in sauce pan; bring to boil and cook until thick, stirring constantly
>2 egg yolks, beaten (save whites for merengue); add small amount of pie filling to egg yolks and mix well, then add it all back into pie filling
>Cook slowly another 2 minutes, stirring
>Remove from heat and stir in 1 Tbsp. butter; cool; pour into cooled baked pie shell
>Whip egg whites until stiff peaks form, adding in 1/4 c. sugar and 1/2 tsp. cream of tartar while whipping; add to top of pie
>Put in 400-425 oven a few minutes, until nicely browned

Yes, Frank and Mary Belle were the parents of the four Widmer girls - Winnie, Hazel, Ruth, Geneva. ~Nancy~
Hi, Joe! This is Sarah, Nancy's oldest daughter who came to visit both times in the photos you posted. I have fond memories also, but I remember trying to teach YOU guys how to say "root" beer instead of "rut" beer! These old pictures are wonderful. I've seen most of them before (Nancy has them) and some are different poses from the same time. Your scanner works great! It is really good to hear from you. Keep posting!
