FAMILY RECIPE
LEMON PIE
(Ruth Sanford)
>Mix together:
1/4 c. sugar
4 rounded Tbsp. flour
>Mix together:
1 3/4 c. water
Juice and grated rind of 2 lemons
>Gradually add dry ingredients to liquid in sauce pan; bring to boil and cook until thick, stirring constantly
>2 egg yolks, beaten (save whites for merengue); add small amount of pie filling to egg yolks and mix well, then add it all back into pie filling
>Cook slowly another 2 minutes, stirring
>Remove from heat and stir in 1 Tbsp. butter; cool; pour into cooled baked pie shell
>Whip egg whites until stiff peaks form, adding in 1/4 c. sugar and 1/2 tsp. cream of tartar while whipping; add to top of pie
>Put in 400-425 oven a few minutes, until nicely browned

I haven't see that one before. Mom and Kathryn were really dressed up - and they look so happy... I know Mom loved G'ma and G'pa Widmer a lot. Thanks for sharing it. ~Nancy~
That is a wonderful picture, Mary. Mary Belle and Frank were your grandparents, too, right? Do you remember them? Grandma and her sister look so cute. I love their shoes!

Sarah, yes, Mary Bell and Frank were my grandparents. I don't remember Grandpa-he died in 1947 when I was about three and Grandma passed away in 1956 when I was twelve. I remember her as loving and so nice, and usually cooking or canning or gardening. We saw her probably once a year in summer and we would go to Hillsboro to see Uncle Leonard and Aunt Ruth and Cousin Dick if he was home. Fun times!----Mary
