FAMILY RECIPE
LEMON PIE
(Ruth Sanford)
>Mix together:
1/4 c. sugar
4 rounded Tbsp. flour
>Mix together:
1 3/4 c. water
Juice and grated rind of 2 lemons
>Gradually add dry ingredients to liquid in sauce pan; bring to boil and cook until thick, stirring constantly
>2 egg yolks, beaten (save whites for merengue); add small amount of pie filling to egg yolks and mix well, then add it all back into pie filling
>Cook slowly another 2 minutes, stirring
>Remove from heat and stir in 1 Tbsp. butter; cool; pour into cooled baked pie shell
>Whip egg whites until stiff peaks form, adding in 1/4 c. sugar and 1/2 tsp. cream of tartar while whipping; add to top of pie
>Put in 400-425 oven a few minutes, until nicely browned

Clint and Liz - hard to believe that was one week before the wedding... were you worried? It's beautiful with or without snow, but I really like the snow right now! Thanks for sharing the pics - how's Liz doing? ~Nancy~
Yeah, we were worried. A week later you never would have known it snowed. Unreal.
Liz is doing better. Not as sick anymore. She'll be 12 weeks this Friday. She's ready to be feeling back to normal.
