FAMILY RECIPE
LEMON PIE
(Ruth Sanford)
>Mix together:
1/4 c. sugar
4 rounded Tbsp. flour
>Mix together:
1 3/4 c. water
Juice and grated rind of 2 lemons
>Gradually add dry ingredients to liquid in sauce pan; bring to boil and cook until thick, stirring constantly
>2 egg yolks, beaten (save whites for merengue); add small amount of pie filling to egg yolks and mix well, then add it all back into pie filling
>Cook slowly another 2 minutes, stirring
>Remove from heat and stir in 1 Tbsp. butter; cool; pour into cooled baked pie shell
>Whip egg whites until stiff peaks form, adding in 1/4 c. sugar and 1/2 tsp. cream of tartar while whipping; add to top of pie
>Put in 400-425 oven a few minutes, until nicely browned

Now THAT'S what I'm talking about! Oh how I would love to dive right into the middle of that right now. That's beautiful! Thank you, Mary. I know you guys had a hard winter this year. Did you have any flooding in May/June?
In case you couldn't figure it out, that was me with the first comment ~ Nancy ~
We didn't have any flooding here, Nancy, but I'm sure you have seen the pictures of Lake Delton at the Dells being drained and the houses it took with it, and there are still parts of Spring Green under water.

I missed hearing about the Dells flooding. I have friends in Oshkosh that suffered some flood damage to their basement... it was a mess for sure. ~Nancy~
